''Cosette'' is her name. Wikipedia policy is to present a fictional character as ''fictional'' and not as if this person had a ''real'' biography. Valjean poses as Ultime Fauchelevant and says he is her ''grandfather'', which tells us nothing about her last name. Isn't Hugo making a point by not giving her a family name? She is the prototypical orphan. 

And calling her Euphrasie Fauchelevent just compounds the error. Hugo tells us about the name Euphrasie only to tell us that Cosette has another name no one uses.
